How to Get a Cleaner Curd Cut

Short answer

A cleaner curd cut comes from cutting at the right firmness, with sharp tools, at an even pace, in a vat that set evenly. Cutting too early produces fines and loses yield; cutting too late gives an uneven, tight curd.

Judge firmness, not the clock

Use the clean-break test rather than a timer alone. When you can draw a knife through and the split holds with clear whey filling it, the gel has structure. Many makers also work from a multiple of the flocculation time so the timing adapts as conditions change.

Technique

  • Cut in one direction fully, then the other, then horizontally — unhurried and even.
  • Keep tools sharp and appropriate to the curd size your style needs.
  • Let the freshly cut curd heal briefly before you start stirring.
  • Stir gently at first: early aggressive stirring is a major source of fines.
