Common Coagulation Mistakes

Short answer

The most common coagulation mistakes are using ultra-pasteurized milk, adding coagulant to milk that is too cool, diluting in chlorinated or warm water, stirring during the set, and changing more than one variable per batch.

The list, in the order we see it

  1. Ultra-pasteurized or UHT milk. No dosage fixes this.
  2. Milk below the temperature range the style calls for.
  3. Diluting coagulant in chlorinated tap water, or in warm water.
  4. Stirring or bumping the vat during the set.
  5. A tablet or powder that was not fully dissolved.
  6. A bottle stored on a warm shelf, or well past its labelled period.
  7. Measuring by eye instead of with a syringe or scale.
  8. Cutting on the clock instead of on curd firmness.
  9. Changing milk supplier, dosage and temperature in the same batch.
