Does one make better cheese?
That framing is the wrong one. Both categories coagulate milk reliably when dosed correctly. Cheese quality is decided across the whole make — milk selection, culture, temperature, pH management, cutting, draining, salting and ripening.
Coagulation is never controlled by one variable. Milk composition, temperature, pH, calcium, the cheese style and your process conditions all shape how the curd forms — the coagulant is one input among several.
How to choose
- Are you making cheese for vegetarian consumers or retail with a vegetarian claim?
- Are you making a traditional style with a defined method?
- Do you need consistent supply and predictable dosing at growing volumes?
- Are you aging the cheese, or selling it fresh within days?
