What overdosing tends to look like
- A set that arrives sooner than your schedule expects, so cutting happens at the wrong firmness.
- A curd that feels tight or rubbery and shatters rather than cutting cleanly.
- More fines in the whey and a messier drain.
- In aged cheese, bitterness developing during ripening.
Why people overdose
Almost always to compensate for something else: milk that was ultra-pasteurized, milk that was too cool, a coagulant that had lost activity in warm storage, or an inconsistent process. Adding more coagulant hides the symptom for one batch and moves the problem downstream.
Coagulation is never controlled by one variable. Milk composition, temperature, pH, calcium, the cheese style and your process conditions all shape how the curd forms — the coagulant is one input among several.
What to do instead
- Verify the milk: standard pasteurized rather than ultra-pasteurized.
- Verify temperature at the moment of addition.
- Verify coagulant age and how it has been stored.
- Verify your measurement and dilution method.
- Only then adjust dosage — one small step at a time.
