How Much Chymosin Should You Use?

Short answer

Use the dosage stated on your product label as the starting point, then adjust until you reliably hit the set time your cheese style needs. Dosage cannot be carried over from a different coagulant, because clotting strengths differ.

The method is the same as for any coagulant

  1. Hold milk, temperature and procedure constant.
  2. Dose at the label recommendation.
  3. Record flocculation and clean-break times.
  4. Adjust in small increments until your target set time is repeatable.
