What is the difference between rennet and chymosin?
Rennet is the name for a milk-coagulating preparation. Chymosin is the specific enzyme inside traditional rennet that does most of the clotting. So chymosin is an enzyme; rennet is the product category. Our full comparison explains what that means in the vat.
Is chymosin suitable for aged cheese?
Chymosin is widely used for aged styles because it is specific in how it cuts milk protein, which matters over long ripening. Ripening outcomes still depend on milk, culture, moisture, salt, pH and ageing conditions — not on the coagulant alone.
How much Bixa Liquid Chymosin should I use?
