Understanding Coagulation Strength

Short answer

Coagulation strength describes how much milk-clotting activity a coagulant delivers per unit of product, usually expressed in IMCU. Higher strength means you use less product per litre — not that the cheese will be better.

Strength is about measurement, not quality

A very strong coagulant used in a small vat can be hard to measure accurately, which introduces variability rather than removing it. The best strength for you is the one that gives a dose you can measure repeatably at your batch size.

  • What dosage range do you recommend for my style and volume?
  • How should the product be stored, and what is its shelf life?
  • What documentation is available for my records?
