How pH Affects Your Curd

Short answer

pH strongly influences coagulation. A lower pH at the time of addition generally speeds the set, while pH through the make shapes curd firmness, whey release and the texture of the finished cheese.

Why pH moves your set time

Clotting enzymes are more active as pH falls, and lower pH also makes the destabilised micelles readier to aggregate. Two batches with identical dosage and temperature can differ purely because one had more acidification before the coagulant went in.
