Understanding Milk Coagulation

Short answer

Milk coagulation is the process of turning fluid milk into a gel. Clotting enzymes remove the protein layer that keeps casein micelles apart; the destabilised micelles then aggregate, in the presence of calcium, into the curd you cut.

What is actually in milk

Milk carries protein, fat, lactose, minerals and water. For cheesemaking the important structure is the casein micelle — a cluster of proteins held in suspension, with kappa-casein on the outside keeping neighbouring micelles from sticking.
