How Temperature Affects Coagulation

Short answer

Temperature affects both phases of coagulation: enzyme activity and the aggregation of destabilised micelles. Milk below the range your style calls for sets slowly and softly, and an unevenly heated vat sets unevenly.

Cold milk is the most common culprit

When a home or artisan cheesemaker reports a set that never firmed, milk temperature is one of the first things to check — particularly in a cold room, an uninsulated pot, or a vat left uncovered during the set.

Too warm has its own problems

Pushing temperature up to force a faster set changes curd character and can work against the style you are aiming for. Temperature is a recipe parameter, not a throttle.

Practical control

  • Measure at more than one depth before dosing.
  • Cover the vat during the set.
  • Watch ambient temperature — the same recipe behaves differently in January and July.
  • Log the temperature you actually measured, not the one you intended.
