What Should Commercial Cheesemakers Look for in a Coagulant?

Short answer

Standardised strength, a dose you can measure accurately at your volume, storage you can meet, documentation you can file, supply you can plan around, and someone who answers the phone when a batch behaves strangely.

Price per bottle is the least interesting number in that list. A cheap coagulant that arrives late, or that nobody can explain to you, costs far more than the difference.

What I tell people is: buy the coagulant you can be consistent with, from someone who will talk to you about your milk.
