What Is Rennet and How Does It Work?

Short answer

Rennet is a milk-coagulating ingredient used in cheesemaking. It contains enzymes that act on the milk protein casein so that liquid milk forms a curd firm enough to cut, drain and turn into cheese.

What rennet does in the vat

Milk holds its protein in suspension as casein micelles. Those micelles stay apart partly because of a protein layer on their surface called kappa-casein, which behaves like a hairy coating that keeps them from sticking together.

Rennet's clotting enzymes cut that surface layer. Once enough of it is removed, the micelles can no longer stay separate: they begin to link, the milk thickens, and a gel forms across the whole vat. That gel is your curd.

Cheesemakers usually describe this in two phases — an enzymatic phase where the enzyme does its cutting, and an aggregation phase where the destabilised protein knits into a gel. The set time you observe is the sum of both.

What rennet is not responsible for

Coagulation is never controlled by one variable. Milk composition, temperature, pH, calcium, the cheese style and your process conditions all shape how the curd forms — the coagulant is one input among several.

Rennet does not determine your flavour, your yield or your texture on its own. It sets the stage. What happens next — cutting, stirring, draining, salting, pressing, ripening — does at least as much work.

Rennet is also described by source: animal rennet from the stomachs of young ruminants, microbial rennet produced by fermentation, and coagulants where chymosin is the clotting enzyme.

How cheesemakers control the set

  1. Choose a target set time for the style you are making.
  2. Bring the milk to the temperature your process calls for.
  3. Dose according to your product label, diluted in cool non-chlorinated water.
  4. Stir it in thoroughly but briefly, then stop moving the milk.
  5. Watch for a clean break, and record what you saw so the next batch is comparable.

Is rennet an enzyme?

Rennet is a preparation that contains milk-clotting enzymes. Chymosin is the principal clotting enzyme in traditional rennet.

Do all cheeses use rennet?

No. Some cheeses are coagulated mainly by acid — heat and acid alone can precipitate milk protein. Many fresh cheeses use a combination of acid and a coagulant.
