My Cheese Tastes Bitter
Bitterness develops, usually in cheeses that are held or aged.
Short answer
Bitterness in cheese has several possible causes. Excess coagulant is one, but culture selection, high moisture, low or uneven salt, pH management and ripening temperature all contribute — investigate rather than assuming.
