My Milk Isn't Setting
The milk never thickens, or thickens but never gives a clean break.
Short answer
The most common causes are ultra-pasteurized or UHT milk, milk that is too cool, coagulant that has lost activity through age or warm storage, a dosing or dilution error, and pH or calcium conditions that are off for the style.
Work through the causes
01Milk heat treatment
Read the carton carefully. Ultra-pasteurized and UHT milk often will not form a cuttable curd no matter how much coagulant you add. Switch to standard pasteurized or raw milk where permitted.
02Temperature
Measure at two depths at the moment of addition, not before. Milk below the range your style calls for sets slowly and softly, or appears not to set at all.
03Coagulant activity
How old is the bottle, and has it ever been left out of cold storage? Test a fresh bottle at your normal dosage as a control.
04Dosage and dilution
Was the dose measured or estimated? Was it diluted in cool, non-chlorinated water? Chlorine and warm water both work against you.
05Mixing
The coagulant must be distributed through the whole vat with a brief, thorough stir — then the milk must be left completely still.
06pH
If your culture was inactive or you skipped a ripening step, the pH may be higher than your process assumes, which slows coagulation.
07Calcium
Pasteurized, long-stored milk may have less available calcium. Some cheesemakers add calcium chloride within permitted limits to compensate.
08Undissolved tablet or powder
If you use tablets or powder, confirm they were completely dissolved before addition. Partial dissolution gives a patchy set.
Work in this order
Check the milk first, then the temperature, then the coagulant, then your measurement. That order resolves the majority of failed sets without changing your recipe at all.
Coagulation is never controlled by one variable. Milk composition, temperature, pH, calcium, the cheese style and your process conditions all shape how the curd forms — the coagulant is one input among several.

Can I rescue milk that never set?
Sometimes it can be turned into an acid-set fresh cheese instead, but you will not recover the make you intended. Treat it as diagnostic information.
