My Curd Is Weak
The curd sets but stays fragile, breaks apart when cut, or gives cloudy whey.
Short answer
A weak curd usually points to milk composition or calcium, temperature below the style's range, cutting before the gel had strength, or reduced coagulant activity. Increasing dosage is rarely the right first response.
Work through the causes
01Milk protein and calcium
Leaner or lower-calcium milk gives a softer gel. Consider milk selection and, for pasteurized milk, calcium chloride within permitted limits.
02Cutting too early
Use the clean-break test and consider a multiple of your flocculation time. A gel keeps firming after it first holds together.
03Temperature
Confirm the vat held temperature through the whole set, not just at addition.
04Heat treatment
Ultra-pasteurized milk gives weak, unsatisfying gels even when it sets at all.
05Coagulant activity
Check bottle age and storage history against a fresh bottle.
06pH
Under-acidified milk at addition can give a slower, softer set.
Coagulation is never controlled by one variable. Milk composition, temperature, pH, calcium, the cheese style and your process conditions all shape how the curd forms — the coagulant is one input among several.
