My Rennet Isn't Working Like Before
A dosage that used to work now gives a slower or softer set.
Short answer
Two explanations account for most of these cases: the coagulant has lost activity through age or warm storage, or the milk has changed. A simple side-by-side test with a fresh bottle separates the two.
Work through the causes
01Coagulant age and storage
Opened date, and whether the bottle has spent time out of cold storage.
02Milk changed
New supplier, new lot, seasonal composition shift, or a different heat treatment.
03Temperature drift
Colder room, different vat, changed heating routine.
04pH drift
Culture activity or ripening time has changed.
05Volume error
A vat filled to a different level with the same dose is a different dosage.
